What makes a project beginner-friendly here?
The implementation path, not the subject matter. Few dependencies, runs on one machine, no infrastructure to stand up first — an AI agent can be beginner-level, and a static site generator can be advanced.
Can I turn one of these into something commercial?
Several are scored 5 for potential precisely because that path is short. The licence decides whether it is allowed, so check it before you plan around it.
I have never contributed to open source. Is this the place to start?
This is a list for building with projects rather than contributing to them, which is usually the gentler first step: you get something working, and only then decide whether you want to touch the upstream.
